Poverty Muffins
2 c. boiling water
2 c. seedless raisins
4 c. All Bran cereal
4 c. Brand Flakes
5 tsp. soda
1 c. Fluffo shortening
2 c. sugar
4 eggs
5 1/2 c. flour
1 qt. buttermilk
1 c. nuts
1 tsp. salt
4 tsp. cinnamon
Pour boiling water over raisins in a small bowl, add soda and let cool. In a very large bowl, cream shortening with sugar, sift flour into bowl, save 1/2 c. flour out to flour. Add salt and cereal. In another large bowl, beat eggs, add buttermilk and blend. Fold in raisins, than add all at once the flour mixture and floured nuts. Mix all until well moistened. Cover and store in refrigerator up to 6 weeks. This makes 4 qt. when needed, bake in muffin tins lined with cupcake papers and bake at 375 degrees for 20 to 25 minutes. Dot not overbake.
Variation;
Replace flour, bran and bran flakes, with the flollowing;
3 c. wheat germ
3 c. wheat flour
2 c. white flour
2 c. cream of wheat
3 c. oatmeal
The Poverty Muffins look yummy, but I am confused about the variations, can you replace just the 5 1/2flour with 3 cups of oatmeal? I’m confused, it doesn’t sound like the volume would be equal. Ann K
Hello Ann, Let me see if I can help you. This was my Aunt Opal’s recipe, which we made in 4H as she was the teacher for years. I never tried it using the oatmeal with out the 5 1/2 flour. I would image the texture would be different. If you should try it let me know how it does. These are very good tasting.So let us know how it works, maybe we will have a new recipe.
